Which resolution should I choose?

144 DPI is right for screens and email. Choose 300 DPI if the image will be printed — the files get large, but the text stays crisp.

Why is JPG smaller than PNG here?

JPG uses lossy compression that suits the photographic content of rendered pages. For pages that are mostly sharp text or line art, PNG often looks better — use the PDF to PNG tool for those.
